When recipes call for indirect heating on the grill, does that always mean that a plate setter is needed?

Yes, or some other form of heat deflector such as the spider from ceramicgrillstore.com with a pizza stone on top. I have a plate setter and it works well, but only for that purpose. If you dont have a P.S. yet, check out the spider because you can do many things with it. They also sell a great adjustable rig setup.

Plate setter or a pizza stone or fire bricks are all possibilities...anything that can put something between the fire and the food...

Drip pans also count, as they shield the food from the direct heat from the lump.

The heat deflector what ever you use will help the food product cook evenly all around w/o having to flip unlike direct.

Before I got my platesetter, I used my raised grid with a drip pn below.
On the mini, I have a little, slightly raised grid and I put a square of aluminum foil below it for indirect cooking.
