How long will it take to cook a brisket flat to 195 internal with a dome temp of 250? Thanks to editing I can come back in here and add that it is a 7 pounder. TIA.

    That would depend on how big the flat is...and even then a broad range estimate will be the best you can get. 90-120 minutes per pound, less time if you foil it at any stage.
  • At 7lbs.. I'd figure around 10 hrs at 250 (+/- 1 hr or so).. you never know sometimes with a brisket, especially a flat.. they can be really stubborn !!!
  • OOPS!! I forgot to say it is 7 pounds. Sorry.
