I think I'll wait till it hits 3 before I venture outside to smoke some more cheese. Think I'll need an extra couple bricketts to hit 75 degrees dome?

That looks great Mike! I can only imagine how good it will taste. That would make an awesome grilled cheese sandwich on a nice crusty bread. Does everything you make turn out perfect? I'd love get a tutorial on how you smoked the cheese.
