I'm having eggers-block, did a couple of chickens the other night just to have meat to eat on this week
They must have been extra fatty b/c egg smoked alot and they are overly smokey.
Anyway since they aren't the best on or in salads or sammies, I'm looking for ideas. I am a little weary of chopped with taters, onions .... and made into hash.
Just looking for a little inspiration.

Shred the meat and roll it up with some cheese and green chiles in tortillas. Put them in a baking dish and cover with more cheese an enchilada sauce. Bake at 350 for 30-40 minutes. -RP

enchiladas was the first thing that came to my mind too.
can also use the chicken in quesadillas or make a nice chili or soup with it. -
Enchiladas, good call. Kids will love also.
