Hocks-Beans-Focaccia...

...is on the menu tonight. I did a second smoke on the hocks last night for a couple of hours using sugar maple. I added them to a pot of Great Northerns this morning. This will be served with some flat bread. I can put a serious hurt on food like this. :laugh:

I start with good beans, and these were loosly based on the Senate Bean Soup recipe on my site. The seasonings were:

onion
bay leaf
garlic
pepper
salt added toward the end (you never know how salty the hocks will be)

I just checked my beans which I have stored. Dated 11 years ago. Probably ok but I think I will refresh the stock.

Raining and the temp has gone down 30°, sure feels like it is time for some beans.

Thanks, I was going to default to someting like the senate bean recipe but I will try the above.

But tomorrow is thirdeye's wet pastrami with burgers.
