I like my butt with crunchy crust. What is the best temperature to cook to get the best crust?

    Use EVOO or better mustard. Coat [ul]heavy[/ul] with your seasoning. The cook & the seasoning will develop your 'bark'.

    250° dome temp and figure 1.5 to 2 hrs/lb.
