Homemade Cheese & Parsley Breakfast Sausage


4 1/2 Lb. Lean pork butt, cubed
1/2 Lb. Pork fat, as much or as little you like.
depends on how lean you like your sausage
2 1/2 Tb. salt, (kosher I prefer) or to taste.
3 Teaspoons of freshly ground black pepper. or
to taste.
3 Teaspoons fennel seed, (I like roasting mine
just a little for more flavor.
1 Teaspoon of Crushed red pepper. (optional)
2 Cloves of Garlic finely minced. (optional)
1 Full cup of Parmesan cheese crumbled.
1 Palm full of parsley.

Again you put as much or as little you want to your
taste. Like Thirdeyes says thats what great about homemade sausage you tweak it to your liking.
