To all that cook pork tenderloin. That cheese that oozes out and drips into the fire IS NOT good smoke flavor !!!

    That is one of the reasons I do them indirect with a drip pan and little water.

    I have done several this way, but this is the first time the cheese tried to escape. Will be more careful next time...
