Is there a correct, or preferred way to place the butt on the V rack ?

Fat side up or down?

Also does anyone here use a mop while cooking pork butt.

    Trim off most of the fat. I cook fat side down so the bark doesn't get messed with. HTH.

    I don't pay any attention to which side the fat is on when cooking a butt. There are some others that might tell you different, but I haven't ever been able to tell the difference when finished. There is a lot of fat in a butt and the egg holds the moisture very well, so I really don't think that it matters imho. I don't mop, but I do use a dry rub. My bark is always plenty tasty.

    I cut off the fat cap to get more bark.

    And I cook on the grid and not in a V-rack/

    But I'm unconventional - like a rebel.... :unsure:

    I cook fat side up, butt dusted with JH's Pecan Rub. I don't mop.
