Pork shoulder vs. brisket

Went to Sam's this morning, with some pork butt on the mind to cook this weekend. I've been seeing a lot of that this week, it seems. Anyway, the two-pack of shoulders was $30, and I thought that I was seeing things. Nope thirty bucks. So...back I went to where the briskets were, and I picked out a nice one to do this weekend. No multiple cooks, not firing both eggs at the same time--just a single cook. Still trying to recover from Memorial Day marathon cooks
The LBGE is cleaned out and loaded up ready to go, and I've got the brisket all seasoned up with some Rudy's Rub. Oak and hickory chunks are mixed in with the new Ozark Oak, and I'm thinking about kicking back with the little ones for a while and firing up the cooker around midnight.
Couldn't believe how expensive that pork shoulder was...

Pork butt has been "on sale" around here recently at $1.59 per pound. I actually saw it at Publix for $2.09.
Sure glad I stock up by the case when it is under a buck a pound. -
Maybe it was a mis-mark. I just picked up a two pack at my Sam's on Friday, I think for $1.49/lb.

Yes, except for publix. Those were in the shrink wrap styro tray.

funny thing is if you buy a case of butts which is two cryovac bags of two butts, you save like 30 cents per pound versus the same thing hitting the shelf.
Prepare yourself. Pork price are expected to rise 30% -
Been following this over on another forum. Per pound price at Sam's has increased about 79 cents per pound the last two months or so.

My local grocer has such great sales, I have only been to Sam's for 3 pack of baby backs.

Price of corn is up and rising (and flooding hurts this even more). Price of fuel is up and rising.
Only a matter of time before increased costs lead to increased price in the end product. -

Supply and demand will take it's course. The only few things I have really noticed going up is fresh produce and bread since I got out of the grocery business.

I just bought a case (57 pounds) of st louis cut berkshire ribs for $3.50 per lb from a farmer. Last 3 pack of babybacks from Costco were $3.49/lb.
Also got two cases of butts for $2.50 pound. I think I scored pretty well for the higher quality of pork, given the prices. -
We'll have to agree to disagree on higher quality. Omaha Steaks come to mind.

You got it. I freeze it. I have had good results with using frozen pork. A lot of people like it fresh, but I can't tell a huge difference. Takes me about 3 days in the fridge to get thawed. I freeze ribs by the case too.

These were cryo packs at Sam's...the last ones I bought ran about $22 for a two-pack.

Didn't know that pork prices were on the rise like that. I saw the price of the BB ribs and was sick...the spare ribs were cheaper, but the weight more than made up for the cost savings--about $30 for a 3-pack of ribs, spares or baby backs.
I didn't know that they cook well after being frozen...next sale, I'll try to grab some like that and just stick 'em in the freezer. That'll save me yet another trip to the store. -
Did anyone see the "Modern Marvels" show on cable recently that was an episode titled "The Pig" ? It was a full detailed history, harvesting modernization, the animal itself,the cuts of meat, uses for the wastes, etc. It was pretty incredible actuially, and they are incredible creatures. Very smart, muc smarter than a dog.
Can't wait for those ribs this afternoon!
