Cooking one of these tomorrow night. My plan is to attempt a milder t-rex method. Sear at not quite such a high temp and then roast. Rub with rosemary, salt, pepper, & olive oil. That has been my go-to with lamb. Of course I'm open to suggestions if anyone has a better ideas.

That looks good CW. I may give that a shot as my second dish at the New Hampshire Fest in June.
Planning on doing MANLY CHILI. Nothing like that stuff Grape Boy does. This is meat and spice nothing else!
Heat that covers every corner of the lips, mouth, tongue, throat and belly. The next day there may be some kick back in another less discussed section of the body.
