Rick, I just replied to your question about the palmetto leaves in yesterdays post. I put it up here for sake of ease.
"Typically, the cuban bread is thin and long. The bread rises and cracks as it cooks. The wet palmetto leaves are used to control where the crack takes place. It adds a little something in the flavor too." -

the recipe came out of bernard clayton's 'new complete book of breads' that fishlessman told us about. it's a great book with thousands of bread recipes and methods...
