Smoked Turkey

I have a smoke turkey I am doing for easter.I have been cooking a 11 pound turkey for 11.5 hrs. My problem is around 3:am I notice the temperture drop to 150 on my egg and there was no more smoke. I added some wood apple, and open the vent all the way. I firgure this would get to temperture while I slept. Instead woke up at 8:25 am and noticed that the egg temperture is still at 150 degrees. I have added charcol and tring to finsih it. I am worried about ecoil at this point! Any suggetions??

Is the dome thermometer sticking into the bird? If so it will give you the temp of the bird and not the egg.

NO. I am worried about the bacteria more than having a dry turkey.

What temp did you start with?An 11 pound bird should take less than 3 hrs at 300.What is the internal temp?

Started at 200 degree help for at least 7 hours no problem. It is hours 8 and 9 where I saw the egg temperture start to drop to 150. My turkey is at 147 internal right now. I reloaded with charcoal and I have the egg dome at 250 currently. Thinking about cracking it up to 325 and finishing the bird. ANy Sugesstions??

Sounds safe to me.I believe you are out of the danger range.I think that as long as the meat didn't drop below 140 it's ok.I would eat it.

I was not wooried about drying the out the bird, just checking to make sure that the thermometer was giving accurate readings. I had a pork butt touching the thermometer once and I thought the fire was going out. turned the butt and all was well.
