Easter is here on Sunday and I have a rib roast but for got I got 2 whole boneless breasts (4 half breasts with skin/no bones) that need cooking tomorrow. Any thoughts or suggsetions are appreciated. I have a bunch of Fuji apples and could make a good semi sweet side dressing for the grilled duck.

I am esp interested in not a too spicy rub or marinade that might be better suited to chicken or pork.

Thanks

QBabe had some eggtastic duck breasts last weekend at the Florida Fest. Perhaps she will pop in!

In the mean time, here is one way.

    Duck, Breasts, Cherrys or Peaches

    INGREDIENTS:
Duck Breasts, Boneless (as many as you need)
    48 Cherries
    1 Tbs. Lemon Juice
    3 Tbs. Port or Cognac
    2-3 Tbs. Butter, Softened

    Procedure:
1 Get BGE to 350-375° F, you can use a higher temperature if you like..
2 Score breasts being careful not to cut the meat.
3 Take the other ingredients and process in food processor, heat and spoon over breasts when cooked.
4 3 large or 6 small peaches will do the job, Fresh, canned or frozen.
