new knife - no more tears?

Hi Eggers. I just got a new knife (Forschner - supposedly competes with Wusthof and Global at a fraction of the price). Anyway, I cut an onion with it last night, and for the first time in years I wasn't pouring tears by the time I was done dicing it. Is it because the knife is sharper and thus there is less stuff splattering around, or was it just the onion? I could just wait until I cut up some more onions, but I thought I would start celebrating now if there is good cause! Hope you're all having a great weekend!

Hard to beat a sharp knife in the kitchen. I have a Henkles carving knife. Just bought a chefs satoku knife at Sam's. Be careful with those fingers.

I have about five different Forschner knives and they are all excellent. Couldn't be happier with them, they cut like there is no tomorrow.

A very sharp knife will make a HUGE difference. People will get as obsessive about their knives as they do about their eggs.

Using a sharp knife will defintley make a huge diffrence in making you cry from cutting an onion. You don't break open as many cells that carry the acid or whatever shoots out of the onion. Paul
