Tri Tips are hard to find here on the MS Gulf Coast. I found (with the help of another forum member) a store in Slidell, LA that sells tri-tips occasionally upon advanced request. That store opened a new branch here on the coast. I asked at the meat counter if they had them, and they said they could cut me some. I was elated and bought 5.

My problem is that during the sear, they shrink dramatically in the length and width and grow to what seems to be the same amount in the thickness. A 1-1/2 inch thick roast grew to about 4" thickness. Is this normal? My recollection in the first few of these I tried,is that this phenomenon was not experienced.

Anyone have any comments on this?... Morro Bay Rich???

Thanks, Bob
