These are the good ones and i don't want to screw-up. A little over 1 inch thick and we like medium rare.[p]What temp and how long on each side and to finish?[p]Thanks for the help[p]eddy-turn

  • eddy-turn,[p]I have very good success with the method often described on this board.[p]Get your grill temp to about 700 and sear them on both sides for about 45 seconds.[p]The remove them, tent with foil and bring down egg temp to about 350.[p]Bake at 350 until rare. (about 2-3 minutes per side.)[p]Remove and tent them again in foil for about 7 minutes. They will continue to cook in foil and should be medium rare when you remove thet tent.[p]Listen for the angels singing when you cut into the meat.[p]Cheers.[p]
