Broken Dome Thermo - pulled pork by touch

Well, I drove up from Warner Robins, GA to Lincolnton last night and started my fire about 8 PM on the small last night. Then I noticed I wasn't getting a correct reading out of my thermo. I took it out of the egg and found out that the stem had been bent somehow. No wonder it wasn't working. [p]I almost called you Larry but I was being lazy so I cooked by touch. The pork came off at about 11 AM this morning. Sat in a cooler for one housr and then served for lunch. The guest said it was the best I have ever cooked and they have eaten a lot of my pulled pork. Quite an adventure but it turned out ok[p]Hope everyone has a great 4th of July.[p]John

I am sure you have done many butts in the past. I promise you I can look at a butt and tell you when it is ready to pull. When the bone is falling out, it is ready to rest and then pull. [p]Chef Jerry
