I just wanted to thank all who wrote in with advice on my Butt cook the other night. It turned out great! [p]I cooked an 8.71 lb bone in butt from 7 PM to 10 AM avg dome temp 250 F. The meat got to 197 F. [p]One problem though - the thermometer I got from Bed Bath and Beyond was worthless. It was a Pyrex digital thermometer with a steel braded wire.[p]I got up at about 1 AM to check on things and the thing was reading 280 F - Needless to say I freake out. The dome had creeped up to about 275 F. I went and got another therm I had (a digital fork therm) and checked and the meat temp was 173 - big relief! [p]Can anyone recommend a good thermometer to use for these slow cooks?

Jason,[p]I just recently got the same thermometer from Kolh's and have't had a better one. Maybe your probe was in contact with the bone?
