Leg of Lamb question

I have a leg of lamb that the butcher butterflied and tied up for me. Does anyone know the best way to probe the meat since it is sort of rolled up? I would imagine that I cannot just stick the probe in the middle of the hunk of meat and hope it's in a good spot. Thanks for any suggestions.
