Good evening, fellow Eggers.
Today I cooked a bird that turned out really good and wanted to share the results.[p]Yesterday, a friend gave me a bunch of fresh rosemary. So I used it, lemon juice, EVOO and DP STT for a rub. More of the Rosemary, lemon and apple wedges were stuffed inside. Then, onto an indirect setup with some goodies in the pan.

    SouthOfI10,[p]Looks great! Ya can't go wrong with rosemary and citrus. If you do go to Harry's be sure to venture across the street (in Marshall's strip mall) to Cajun Meat Company. Their whole boneless chicked stuffed with shrimp (or sausage) dressing is To Die Fo!

    Hey, I've been there! I really like those stuffed chickens, too! I never got around to trying anything but the crawfish stuffed ones. The wife (co-owner, I guess) says that her husband can debone a chicken in about a minute... And I've heard that they will also take orders for live crawfish in season. I haven't ordered any, though.[p]Thanks!
