What to do with that extra beer can chicken

Well, we thought that we'd need 2 chickens to feed the ravenous family...but with sides, one was enough.[p]So, after a day in the fridge...and the temps outside at 28 and dropping fast. I made the executive decision not to egg tonight. [p]My solution? I shredded the refridgerated beer can chicken and rolled it up in some corn tortillas and threw them in a pan. I added some enchilada sauce and some cheese. bout 20 minutes in the heat at 400 and you're set.[p]Well, i have to say...even though i consider myself a pretty good mexi-cali cook...i've reached a new enchilada Nirvana with the awesome smokey flavor of the chicken rolled up in that cheesy tortilla goodness.[p]sorry no pics this was devoured in minutes.

    Good idea, we had about the same tonight with chicken burritos made from lefover split chickens. Sometimes leftovers are as good as the first feast. (or better)[p]Yes sir, smoked chicken will put you into a state of Nirvana bliss. Breathe deep, be happy, sleep well, smoke more chicken.

I'm going to have to treat the computer like some people treat their refrigerator. Off limits after dinner. :)[p]Alas, your post does beg a question. What you've created sounds very how could I twist it for a Superbowl appetizer contest? This is a big contest...lots of bragging rights. [p]I can't do whole enchiladas (that begs for a pun). How to make them into an appetizer? Shredded beer-can chicken in won-tons and deep fried? They'd be would be different, that's for sure.[p]That's how I'll put myself to sleep...counting enchiladas.[p]G'Night![p](PS, my first idea was very slow short-ribs...fall off the bone and sweet as candy)
