After years of lurking, dreaming, waiting...I broke down and ditched my old New Braunfels offset and bought a large BGE. After several years of 'hit or miss' brisket, I got the Procom4 from BBQ Guru as well. I figure in about 6 months, I'll be able to get my wife back from the pawn shop.[p]Did my first brisket last night and didn't know it, but the fan on the Guru wasn't working. About 3am, it beeped me awake for a low temperature alert. Went out, carefully dumped in some charcoal and wood and went back to bed. Woke me up this morning with a meat done alarm (about 4 hrs ahead of schedule) and a temperature reading of over 300. Needless to say, I was a little worried that I'd just made a 6 lb piece of leather. Stuck it in some foil, wrapped it in a towel and lovingly placed it in a cooler. A few hours later (with several neighbors over), I sliced it open and it was moist, flavorful, and delicious. Definitely one of my top 5 briskets.[p]I can't get over how moist the egg kept it. Needless to say, the egg is a work of art and the Guru is simply amazing. I've already sold my buddy on one (and the Guru as well). If you're like me and have been lurking and waiting...just do it. Its even better than you think it is.[p]Can't wait to try it with the full Guru fan capabilities. [p]
