Why, oh why, did I wait so long to try some fatties? Made 2 today, one was Jimmy Dean's maple with Dr BBQ's Big Time Rub. The other was JD's sage with John Henry's Bourbon rub. Smoked them with a chunk of maple. Both were OUTSTANDING. So simple and great with biscuits. Thanks to all who inspired me to try them.

  • Pdub,
    a one pound tube of sausage turned into pure smoked sausage heaven by the egg!
    just remove the plastic wrap and roll in your favorite dry rub, smoke for 3 hours at 240 till 170 internal temp.
