Well, I pulled it early. If you check the graph you'll notice that I pulled it at 155 F. I was really nervous about this, but I had to take it to a party, and I was already a half hour late. Here's what this little baby looked like when I pulled it: [p]

So we ran to the party, letting it rest as we went. Got there, and it was terrific !!!!! Tender and moist. [p]

I never would have thought a chuck roast would be edible at 155 let alone as good as this was. Seems to prove the point that once it pulls out of the plateau, it's close to done. We don't need those higher drying temps.
