Prime, well, Choice Rib With PICS

Here is my first prime rib. I used Madmaxs' procedure, indirect @ 500 immediately shut down to 325. Coated it in the morning with Kosher Salt, Granulated Garlic, Cracked pepper, dried rosemary (its what I had), and Olive Oil.[p]P1070356.jpg

Brought the egg temps down to 400 or so for like 15 minutes. Then shut down to 325.

Cooked it to 135 internal, took about 1.5 hours. Let it rest for 15 minutes. Temp reached 141 after resting. Should have taken it off at 125. Still tasted great. Great "crust" on the outside.
