So I am working out of the house this morning and had a chicken thawed in the fridge. I am now a dedicated believer in the spatchcock method. The wife came home for lunch and agreed it was the juiciest, most flavorful chicken we ever had. Way better than any fried, beer canned or BBQ chicken I have made in the past. Thanks to The Naked Wiz's directions on his web page! I simply used some Montreal Chix seasoning and let the bird sit out for about 15 min before I egged it at 350, direct, raised grid for 1 hour over a sweet wood blend for smoke. I even have enough left over for a small chicken salad! Great way to start the week...
