If you have tried my 48 hour brined,spicy rubbed, pach glazed, peach smoked, pork butt recipe and have leftovers.....
You might want to try some sliders, like these I made today.....
I added some original Blues hog sauce, some of the left over pulled pork cooked to sauce reduced and began to caramelize...added 1/2 cup of sauvignon blanc, cooked to reduced down to about 1/3.....add freshly shredded gruyere cheese ( about 3 parts pp to one part cheese) stir until cheese melts and is blended evenly.
I add a couple slices of dill and some finely sliced vidalia onion. Put on a slider bun and enjoy.
I am having two with a chicken stock base, french onion soup, with homemade herbed croutons toasted and butter added, under a brown and bubbly gruyere topping.
Best lunch I have ever made.
