Burnt ends?

My last brisket I enjoyed the flat day of, and broke down the point into smaller pieces and vac sealed and froze. 

Is it possible to do burnt ends with past cooked and now frozen point?  Thaw completely and then head to an aluminum pan with all the accoutrements? 

I figure this would be okay, but never done before so looking for advice and insight.
