Ok, Sunday was my first time using my Egg. Did steaks that were awesome (and I have some great pic's, just need to take the time to figure out how to post them).

Tonight are pork chops. From doing a search, most suggest doing them like a steak. Sear for a few minutes a side then "dwell". Are we talking Trex'ing here? Let the chops sit 20 minutes while the Egg comes down to 400? Then throw a few soaked chunks in for smoke? How long at 400?

Can someone post instructions on quick and easy pork chops? Thanks in advance.
