irishrog,[p]Take a jalapeno and cut it in half or core it. Remove the veins and seeds.
Stuff the pepper with cream cheese and maybe a piece of meat.... precooked sausage, chicken or pork works good.
Put the two halves back together. Take a half piece of fatty American style bacon and wrap it around the pepper.
Grill around 300, give or take, turning until the bacon is brown and crispy.
These make a great appetizer and I don't know anyone who doesn't like them..... give them a try![p]John [p][p]

Rumrunner,
Can you tell me if you use fresh jalapenos from the produce section or bottled ones? Ever try using different peppers?[p]Thanks,[p]

The Reverand, "FRESH". Use the pepper of your choic. Let your imagination run wild..same with the fillings. Check the link for another 'variation'

Rumrunner,
Thanks, I'll run out and get some fresh ones...I've seen folks suggest direct at 300 and indirect at various temps. Seems direct would crisp the bacon better...which do you suggest?[p]Thanks much

The Reverand, 300-325° is good. Watch out for the grease flame if you go direct.

Rumrunner,
Got it! Thank you for the help.
Have a safe, fun weekend.

If I had taken the time to fully read your post, I would have seen that you already knew how to make them.... oh well, now you know my take on them. :~)
Happy cookin![p]John

Rumrunner,
I like to parboil the bacon: makes it easier to wrap around the jalapenos, and the bacon is guaranteed "done" by the time the jalapenos are.[p]We do ours direct, on a WMart grill topper.[p]Ken
