TBS rolling over a pork butt - using Canadian Maple charcoal and a couple of cherry chunks. 

Dry brining a couple of prime Tri tips which will be seared later. 

Grandkids playing in the background - great start to the day.

    Those tri-tips are gorgeous.

    Large BGE & Mini Max for the wok. A few old camp Dutch ovens and a wood fired oven. LSG 24” cabinet offset smoker. There are a few paella pans and a Patagonia cross in the barn.

    Agreed. For some reason the commissary on base has started carrying prime Tritips and prime NY Strips pretty regularly lately. 

    Have been buying a couple each time I’m there and putting in the freezer.

    Tritips just went on the MM after dry-brining for 6 hours or so.

    Agree that it’s a good charcoal. Very neutral and clean-burning.

    I think my favorite "food porn" pictures are just about always of rare or medium-rare beef or lamb.  Your tri-tips look gorgeous -- great job!

    I’ve found the basques sugar maple (green/white) Costco bag which I’ve liked previously has a ton of non carbonated pieces in it and isn’t burning as clean as previous years when I’ve stocked up 

    hopefully just some bad luck with the first two bags, otherwise I think I still have about 8 left in the garage lol
