Doing baby back ribs today. Done them before with no problems. But tonight after keeping the temp at a steady 220-230, for over an hour, I go to check and it has shot up to 300. I open and adjust to get it back down. Just now I checked and it is at 250. The daisy wheel is closed with the top vents barely open. You could just get a toothpick through them. Bottom vent is open maybe an inch. Can't figure out why it shot up 80 degrees after being steady for an hour.

Still hard to keep it below 250 with bottom vent open 1 inch and top small vents open maybe 1/8th of an inch.

A crack of an 1/8” at the top and bottom gets me to 250 usually.
