Enjoy eating well, and having a good pipeline and freezer full of good beef decided on some petite Denver steaks tonight for dinner.
Simple heavy salt, more salt and pepper. 600 degrees till 125 and rested. Absolutely rich and tender. Cut on the board and didn’t need a knife on the plate.
Will post up more wagyu cooks. Burgers, Picanha, and even chicken fried steak!

That’s beautiful!“There are three rules that I live by: never get less than twelve hours sleep; never play cards with a guy who has the same first name as a city; and never get involved with a woman with a tattoo of a dagger on her body.”

That is a sweet cut of beef and you gave it the deserved respect. Great cook and outcome. Eggcellent cross-section right there. Congrats.
Louisville; Rolling smoke in the neighbourhood. # 38 for the win. Life is too short for light/lite beer! Seems I'm livin in a transitional period. -

great looking steak! I had a little Wagyu Ribcap myself last night with the fam. It I'm getting a little lean (I have a tri tip and a couple of flaps left) but my Wagyu guy is stopping by today on his way home from the ranch to restock the freezer. Looks like you have quite the hookup as well! Fantastic!Keepin' It Weird in The ATX FBTX
