12 Pound porchetta - cook temp and time?

Hi all - back after a long break away.  On Saturday at 5pm I'll be serving a 12 pound porchetta, which I intend to smoke with apple wood using my new Flameboss 300 (which after my first usage appears to be simply awesome).   Can anyone provide any tips on what you would set for cook temp, as well as approximate time/done temp?
