Watching Hockey tonight. Decided to go for fajitas. Started with some homemade queso using sodium citrate per recommendations from @JustOneOfTheGuys. On went the Rockwood to 400. Then decided to cook some bacon wrapped jalapeños with cheddar and cream cheese. SWMBO wanted margaritas. On went the skirt steak and onions next. Then finished with cinnamon sugar pineapple on the egg. Nice way to spend a Saturday Evening in Texas.
