Sometimes it’s just nice to work on perfecting basic skills. Picked up a butt and some ribs for the Saturday spring cleanup...aroma coming off the egg was a nice distraction.
Small shoulder and 2 racks of back ribs. Shoulder was Memphis dust rub and ribs were Meatchurch Deez Nuts pecan rub.
5 hrs at 275... pulled shoulder off and finished up foiled in oven for a bit. Let the ribs ride until passed toothpick test.
Made a quick, spicy pickled red onion. Liquid made a nice vinegar sauce for the pork.
Haven't been as big of a Deez Nuts fan.... tried on wings and chicken and didn’t care for it much. Was trying to use up the rest and these might’ve been the best ribs I’ve ever made. Thin layer of Rufus Teague glaze before they hit the plate.
Had to post the G&T... cheers!
