London Broil reverse

JMCXLJMCXL Posts: 909
I saw a recent post about cooking a London Broil to 128 then firing the egg up and finishing it off.  The question I have is what is a good temp to start the reverse cook at??? I am looking to go around 275, will that work? then remove it and fire it up to around 500-600 to finish. Also, about how long does take to reach the 128ish temp.  About to put it on so I hope someone is on the forum that can help.  Thanks for nay feedback

My MOST favorite of favorite beef meals involves flank steak. There is a bit of tenderizing involved since flank can be tough. Also involved is a 24 hour surface marinade/seasoning. BUT as for grilling I only do a sear on both sides direct at a 650 to 700 degrees for 2 minutes and 2 minutes! Be sure to cut cross grain.
