Seared Sea Bass and SV’d Carrots n Green Beans

Fun Sunday cook.  Only got one pic.  

Sea Bass was seared in the CI and the veggies took a 1hr swim at 183.  Carrots hit a skillet to glaze a bit at the end.  This was my first SV on veggies.  It won’t be the last.   The carrots were phenomenal as were the beans.   The fish was the best SB I’ve cooked.

    The Sear on the SB looks amazing. I never use my SV, might need to go get some carrots.  Can you let me know what you did to the veggies? Thanks

    Thank you for the compliments.  

    Carrots were vac packed with 2tbls of butter, 1tbls of sugar,salt and pepper, SV’d at 183 for 1 hr then hit a hot skillet to caramelize.  The beans had the same additions and time just didn’t hit the skillet.

    Another diamond plate for the win.  Great cook as always but you definitely nailed the sea bass sear.  Congrats.
    Louisville; Rolling smoke in the neighbourhood. # 38 for the win.  Life is too short for light/lite beer!  Seems I'm livin in a transitional period.

    Carrots go to a whole new level after a SV swim and then glaze. Beautiful cook Matt.

    That would not have looked or tasted nearly as good had you used a square plate. 

    I need to try more SV veg. That’s a nice looking meal.
