Poke Chops

Options
Dug a couple monster chops out of the freezer today. Rubbed one with Raging River and the other with Jamaican Firewalk. They went for a swim at 136* for 3 hours then were finished over Rockwood and some pecan. Sauced with Big Bob's. Made some sweet tater fries to accompany them. It's hard to beat a great chop.
