Knew I was going to be stuck at home all day (and probably beyond), so got pork butt last night while doing the obligatory milk/bread run. Got the pork on around 9 AM just as the snow was starting here in Raleigh, expecting up to half a foot possibly. Still coming down hard now.

Just pulled at 203 degrees. About an hour of FTC until it’s time for dinner. Snow still coming down until 9 PM apparently, we are about to have a crap ton.

So everything was going just peachy, just pulled the pork and was literally taking my first effort at Celtic Wolf’s cornbread recipe out of the oven when the power went out. Looked a little funny and wasn’t as browned as I’d hoped but it tasted great.
At least everything was still hot to eat but no power for the foreseeable future is a lot less fun now that we have two toddlers lol.
