When I saw YFT regrettably my mind did not pick up on Yellow Fin Tuna.  (Must be the corrupted sailor life).  Of course, I didn't figure YFT would be found in Henderson. (What do I know??)
Great cook and I'm sure you nailed the scallops as well.  Diamond plate for another true banquet.  You are on a roll.  Cranking out some inspirational cooks and Tuesday at that.  Dang-

@Mattman3969 - suffice to say that any abbreviation with "F" is short for...
perhaps phque will slide past the buffalo.  Just a natural process...
