Pork Belly burnt ends

I've decided to try it and man.  Now I know what all the fuss is over.  I'll be doing this cook again. Only had one issue. Egg not big enough. Need bigger.  Need to look at a lg or xl. Currently own a med.

Those pictures look WONDERFUL!  I'm way too <cough> "heavy" as it is, though, and the last thing I need to do is start making candy out of pork fat.  DAYUM that stuff looks and sounds fantastic, but I'm going to try to stay away...

@Theophan - invite pork carnivores over and that way the inhalation rate will be such that you can have a couple and "all is well" as there won't be any left-overs.  This is the "window of opportunity".

That sounds like a great plan!  Of course, I'd have to taste one to see if they'd been smoked well enough.  And another to be sure.  And maybe just one more to really nail it down.  And then I'd have to taste one after saucing to see if the sauce had laid down right, and another because the first one wasn't quite right, and then a third to be sure I didn't need to put some more sauce on, and then maybe add a little more sauce just for good measure, and then taste one to see how that went, and then...

Only difference I used some jalapeño jelly to give it a little kick. Everything else was pretty much the same.

Okay thanks. I been looking for a cooling rack that fits the egg. Is the cooling rack necessary vs just placing on grid?

Cooling rack is not necessary, just makes it easier to transfer to the pan when time for that step.  Enjoy the meat candy.
