My meatloaf journey...

After reading Dredger's meatloaf post (and I don't know how to do the @hyperlink thing) I wanted to try my hand at it.
The journey started with yesterday's purchase of the new hinge band assembly at our local ACE hardware.
A little more than some of you have paid, but this dealer is very responsive.
Kat, my wife, sourced the ingredients for me and this is what it looked like when the IT hit 155. Must be doing something wrong because doesn't look anything at all like Dredger's.

This was the cook. Maybe some pointers?

Looks like a winner to me. I don't see anything wrong with it.

Start out by putting a way bigger slice on your plate.

Looks fine to me also. Main thing is that it tasted good. FWIW, I cook it at 325, but I use the adjustable rig to get higher in the dome, so not sure if that was the difference in appearance, but as long as it was good, it's fine.

I'm still learning temp control. It took about an hour to get to 325 and then a degree or two until done.Michael
