Expecting 100+ people tomorrow for a get together of friends and family. I am providing brisket, pulled pork, ribs, burgers/dogs, cole slaw, and baked beans. Guests are asked to bring a side and whatever they want to drink.

Getting things started by defrosting 30# of SRF Gold brisket I bought in the BOGO sale last fall.

    Any ideas on how to serve the Wagyu to those that would appreciate it, and the Walmart brisket to those that can't tell the difference without offending anyone?

    Just switch the labels around on them, and tell only those you know will enjoy it to go for the "basic" brisket instead of that Walmart "wagyu"

    Just need to being some lawn chairs, a side dish, and whatever you want to drink.

    Thanks. I figure it is good practice for getting the logistics down for bigger cooks. I have a 50th anniversary party for at least 50 people and a party for 100 people both coming up in August. Since those are paid gigs I have to nail those cooks.

    You will create a whole new group of brisket lovers with those SRF's.  The post banquet sticker shock shopping may alter their enthusiasm down the road.

    tip off those close to you to hold back, have a few beers and nibble on other stuff and let the interlopers eat first. Throw a few WM briskets out and be a good host. Hand out plates to people you don't know and say "so glad you could come, please go right ahead". Have your friends insist that people they don't know go first. Tell them to dig in and have all they like. They will line up at the trough, tell you how great it was and go back for more. When they are full of 2 loads of wally world brisket discreetly cut up one of the SRF for the "stragglers".

    People will be astonished at your generous hospitality and will have the best bbq they have likely ever eaten. They don't have to know anything else.

    Just finished prepping 14 racks of baby backs, 4 briskets, 8 butts, and a whole pork tenderloin. My 7 y/o grandson open the refrigerator door for me so I could load in the last brisket and he said "whoa."

    First picture is one of the SRF Golds.






    Still have ABT's, and beans to prep for tomorrow.

    8 butts and the two Wally World briskets on. The SRF goodness will go on in a couple hours as those hit the finish line much faster than a normal brisket.
