Boiled ribs ..

If you consider Sous Vide boiled that is. I cooked these using the Anova for 22 hours at 150. Then smoked them for an hour, followed by a sauce and slight sear after saucing. Man the XL gets from 225 to 550 in like 2 minutes with the vents open. These were some of the best ribs I have ever had. Tender and juicy. The off color out of the bag still freaks people out tho.

They look great, but really, really different -- almost looks like it'd be practically a different meat! Very pale meat on those bones!
I love my ribs really smoky -- did they get enough smoke for you in just an hour of smoking? -
Yes they were plenty smokey. I had a really big chunk of hickory on the hot spot of the fire.

I wonder what a really good sear on those ribs would do for visual aspects.I've slow smoked and eaten so much pork, I'm legally recognized as being part swine - Chatsworth Ca.
