Lot a ways to go, the Travis's method my be a good one to follow or DR BBQ on the BGE website. He rubs it with some coffee and other ingredients, smoke I think to 150-160, place in a foil pan with brewed coffee, cover and cook till it probes like butter. I only cook packers, haven't done just a flat by itself.XL, WSM, Coleman Road Trip Gas GrillKansas City, Mo.

For the record I have hosed up many flats and likely would still be challenged til the local market (Costco) finally started carrying packers on a relatively frequent basis. My success rate (better than a single in baseball terms) was about 50%. Never did try the Dr. BBQ recipe suggested above but it does get solid reviews. Linked here:

The finish-line is the feel, temp is only a guide.Louisville; Rolling smoke in the neighbourhood. Life is too short for light/lite beer! Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.
