Lemon & Pine Nut Pizza

Doing some carb loading before attempting the Spartan Race tomorrow. Saw this recipe in F&W and had to try it. I was skeptical that the lemon slices with peel and all would be okay to eat, but they came out tender and delicious. Really good pizza, the lemon flavor infused the entire pizza. I sliced the lemon as thin as I could by hand, next time I'll use the mandolin to get even thinner. Ingredients: olive oil, mozzarella, pine nuts, lemon slices, basil.
