Table nest may not be enough protection

I have a new XL and built a cedar table.  I chose a table nest and felt like this provided adequate heat protection until last night.  I was cooking pizza at my goal of 500 degrees.  Near the end of that cook, the egg had gotten to 650 degrees.
I placed my hand under the table nest and nearly burned the crap out of my hand on the cedar table.  It was incredibly hot!  I am seriously thinking about adding some paver option below the nest.  My 400 degree cook tonight did not get the cedar table hot, so I guess the biggest concern is if you are cooking at super high temps.

Belt and suspenders when dealing with fire and wood is definitely a good move.  There have been too many fires (>0) with wood tables.  You are the first I have seen here that discovered an issue with a stand-alone table nest.  Great that you got it before any serious damage occurred.
    Thanks for the thread.

  • I made my tabletop out of granite and used the cutout piece of granite under the table nest. Even bought diamond plate and used that to cover the shelf that holds the granite piece that holds the nest.

A paver added would provide additional protection, fire bricks even more.

Are you still using the original fire grate or have you replaced it with one of the more open grate aftermarket options?

In cooking, often we implement steps for which we have no explanations other than ‘that’s what everybody else does’ or ‘that’s what I have been told.’  Dare to think for yourself.
