Cooking 16 porterhouse chops 1 1/2" tonight.
Just put them in a brine .
16 oz kosher salt , 3/4 C Brown sugar and 1 1/2 gallons of water.
Planning on leaving them in there for 2 hrs.
Then applying Mickeys coffee rub.
Should I rinse them when the come out of the brine or just let them dry ?

I've heard it both ways. I don't rinse them personally. There's not enough residual sugar or salt to taste, and the scant bit of sugar that's there helps with the browning process.Michiana, South of the border.

I always rinse because that's how I learned. Last week I forgot to rinse some chicken breasts after the brine. I added a semi salty rub and threw them on the egg before I realized I had forgotten. I was sweating it but they were perfect. No difference that I could tell. So- rinse, or do not. You'll be fineKeepin' It Weird in The ATX FBTX
